We managed this on a Verizon 64GB iPhone 5S with iTunes 11.2.2 (3) and OSX 10.9.2. We don’t know if using anything different might cause different results or effects, and do remember that this iOS 7.1 update was made with iTunes.
So, when I connected the iPhone 5S, iTunes told me I’m using the most up-to-date OS. Then I get a prompt asking if I want to restore a backup, and when I hit yes, I was offered iOS 7.0.4, which was created when I went up to iOS 7.1.
Fingers crossed I clicked on it and it works! I’m now on iOS 7.0.4, although there are some distortions and some files missing.
A few users have said that their backup was corrupted while using this method and if this happens to you then you should try the iPhone Backup Extractor which is very useful indeed.
